A clean anthocyanin whole-bean curd using whole-active fine particles of Seoritae, and its preparation method are provided to use physiological active substances contained in the outer skin of bean. A clean anthocyanin whole-bean curd using whole-active fine particles of Seoritae is prepared by the steps of: (i) mixing whole-active fine particles of Seoritae with soft water in a clean room(a relative humidity of 20%, a temperature of 20°C, and class 10000); (ii) steaming the mixed raw soybean milk to 102°C to obtain steamed soybean milk; (iii) cooling the steamed soybean milk to 5~10°C; (iv) adding enzyme and coagulant to the cooled soybean milk; (v) packing the cooled soybean milk with the enzyme and coagulant in a container; (vi) curdling the soybean milk in the container with steam at 60~65°C for 35~60min, sterilizing the bean curd with steam at 85~95°C for 25~35min, and cooling it with water at 20°C to make clean anthocyanin whole-bean curd; and (vii) refrigerating the clean anthocyanin whole-bean curd. |
