<p><P>PROBLEM TO BE SOLVED: To obtain turbid "Awamori" liquor (unrefined liquor of Okinawa Island) having white turbidity with uniformity and superior appearance without causing significant change in components or flavor of "Awamori" liquor by producing white turbidity similar to that of refined rice wine, in "Awamori" liquor. <P>SOLUTION: The method for producing turbid "Awamori" liquor includes rapid adding of hard water or soft water to distilled Awamori liquor, having a high alcohol content so as to provide "Awamori" liquor with white turbidity, and white turbid treatment is carried out stably, by alternately adding hard water and soft water to Awamori liquor. A coagulated material having a white turbidity is filtered and separated and dried into coagulated powder to be added to "Awamori" liquor to yield turbid "Awamori" liquor. <P>COPYRIGHT: (C)2008,JPO&INPIT</p> |
