摘要 PROBLEM TO BE SOLVED: To provide salted salmon and trout easily processed, and having mellowness and also elegant and familiar flavor, and to provide a method for producing the same. SOLUTION: The salted salmon and trout is obtained by eliminating gills, bowels and dark colored flesh from a fish body, sprinkling salt on gill-eliminated parts, an abdominal cavity and the surface of the fish body followed by covering the fish body with salted cherry leaves and flowers so as to be flavored with cherry scent. The method for producing the salted salmon or trout comprises eliminating gills, bowels and dark colored flesh from the salmon or the trout, washing the salmon or the trout with sea water followed by removing moisture, spraying salt at 10-30% of the weight of the fish body on the gill-eliminated parts, the abdominal cavity and the surface, and covering the whole of the fish body with salted cherry leaves and flowers to be flavored with cherry scent.
