It is intended to provide a bread which is excellent in texture, lightness and flavor though it contains catechins in a large amount. A bread produced by adding a purified plant extract containing catechins so as to give a catechin content of 0.2 to 0.5 part by weight per 100 parts by weight of cereal flours, wherein the weight ratio of catechins/tannin in the purified plant extract containing catechins is from 0.81 to 1.10. |
