A method of manufacturing a vitamin beverage containing fermented soybeans obtained by inoculating Bacillus subtilis 028 1(KCTC 11099 BP) or Bacillus subtilis 028 2(KCTC 11100 BP) alone into heated soybeans or mixed strains of Bacillus subtilis 028 1 and Bacillus subtilis 028 2 thereinto is provided to produce the vitamin beverage with excellent taste, flavor and overall palatability as well as functionality. Soy beans are heated, inoculated with mixed strains of Bacillus subtilis 028 1(KCTC 11099 BP) and Bacillus subtilis 028 2(KCTC 11100 BP) and fermented to give fermented soybeans. The obtained fermented soy beans are mixed with optional ingredients and purified water to give a vitamin beverage containing 1 to 10% by weight of fermented soybeans. The optional ingredients contain herbal extract, fruit juice, sugars, vitamin stabilizers, drink additives, taurine and squalene. The Bacillus subtilis 028 1(KCTC 11099 BP) produces polyglutamic acid when inoculated into heated soybeans and needs biotin for growth. Bacillus subtilis 028 2(KCTC 11100 BP) does not produce polyglutamic acid when inoculated into heated soybeans and need biotin for growth. |
