<P>PROBLEM TO BE SOLVED: To provide a powdered composition excellent in transparency and colorant preservation stability after reresolution, and to provide food compositions, cosmetic compositions and pharmaceutical compositions, containing the powdered composition. <P>SOLUTION: The powdered composition comprises (a) an oily component containing at least one functional oily component, (b) a saccharose fatty acid ester and/or a polyglycerol fatty acid ester and (c) a phospholipid, wherein the composition ratios of (b) and (c) are the same or (b) is larger ratio.
