<P>PROBLEM TO BE SOLVED: To eliminate problems about appearance or problems of texture, keeping quality and operation efficiency possessed by a conventional cherry leaf processed product and to provide cherry leaf extract powder imparting a mellow and natural flavor of a cherry leaf and having excellent solubility. <P>SOLUTION: A dried salty pickled cherry leaf is subjected to extraction with an aqueous solvent in which a starch hydrolyzate is dissolved at a temperature within the range of 30-99°C. An excipient as a powdering base is added to the resultant extract liquid so that the ratio of the extract derived from the dry salty pickled cherry leaf in the cherry leaf extract powder is 1-50 wt.%.
