<P>PROBLEM TO BE SOLVED: To provide a filling forming pretreating method free from holding bubbles and leaking out seasoning liquid each caused in forming treating work of meat lump before a smoke process, filled in a cylindrical casing in the production of ham and bacon, and to provide a pretreating machine. <P>SOLUTION: This filling forming pretreating machine (1) of ham raw material meat lump is composed of a filling apparatus (3) which fills raw material meat lump (M) supplied from a raw material meat lump supplying chamber (8) in a cylindrical casing (C) having vent holes on the entire circumferential surface, and a raw material meat lump forming chamber (6) which forms the raw material meat lump filled in the cylindrical casing (C). The filling forming pretreating method for the raw material meat lump comprises sucking air in the raw material meat lump forming chamber (6) at high pressure and in the raw material meat lump supplying chamber (8) at low pressure with the filling forming pretreating machine (1) of the ham raw material meat lump, making each the raw material meat lump supplying chamber (8) and the raw material meat lump forming chamber (6) communicate with vacuum pump apparatuses (11a) and (11b), and filling, sealing and forming the raw material meat lump (M) in the casing in a reduced pressure condition. <P>COPYRIGHT: (C)2008,JPO&INPIT |
