Loading and unloading method for filling the shelves of trolleys (2) with e.g. baking trays (4) carrying uncooked dough products (18) uses a lift which is lowered to transfer the tray to a first turntable (16) which rotates it though 90[deg] , after which it is passed to a workstation where it is filled with dough products. It is then fed to a second turntable (17) which turns the tray through 90[deg] and passes it to a second lift. This passes it to an empty shelf on a second trolley. Independent claims are included for: (A) a similar method, but with no turntable, the rotations being carried out by the two lifts; (B) a similar method in which there are no turntables and the trays are not rotated;apparatus for carrying out the first method which incorporates turntables; (C) apparatus for carrying out the second method, which incorporates lifts which can rotate the trays;and (D) apparatus for carrying out the third method in which there are no turntables and the lifts do not rotate.
