PROBLEM TO BE SOLVED: To provide a method for mass-producing an old-fashioned doughnut, having a proper shape and appearance, with unique crack on one side and by which the production efficiency is satisfactory, without wasting dough, and a proper texture thereof can be maintained over a long period of time, even after packaging. SOLUTION: Making of old-fashioned doughnut includes the steps, wherein water in an amount of 15-40 pts.mass with respect to 100 pts.mass of wheat flour is added and kneaded with raw materials, mainly of wheat flour to provide the dough; the resultant dough is then introduced into an extruder and extruded from a die orifice (refer to Fig.1) in which one protrusion is protruded into the orifice to afford a string-like dough having one cut formed in the longitudinal direction of one surface; and both the ends of the string-like dough are bound to provide a ring-like formed dough, and the dough is fried.
