A method for aging meat or fish by using walnut comprises the step of adding a walnut extract (or with another extract) when aging meat or fish. A method for enhancing the flavor of meat or fish by using walnut comprises the step of adding walnut (or with another ingredient) when boiling meat or fish. The flavor and nutrients of walnut permeates into meat or fish through the steps, thereby producing high-quality mackerel or pork.
