摘要 A preparation method of kimchi with freeze-dried Alaska pollack is provided to obtain a healthful kimchi product containing effective nutrients such as protein, calcium, iron, and vitamin. A preparation method of kimchi with freeze-dried Alaska pollack comprises the steps of: (a) shredding washed radish, and cutting washed Chinese cabbage into 2 or 4 pieces; (b) preserving the cut Chinese cabbage with salt water having a concentration of 10±2% for 10~24hr; (c) washing the salted Chinese cabbage with running water 2~4 times; (d) naturally dehydrating the washed Chinese cabbage in a dehydration container for 20~26hr; (e) mixing 6.5~7.5wt. of the shredded radish, 1.2~1.7wt. of Korean leek, 1.8~2.2wt. of garlic, 0.28~0.32wt. of ginger, 2.4~2.6wt. of red pepper powder, 0.95~1.05wt. of sugar, 0.95~1.05wt. of fermented anchovy sauce, 0.45~0.55wt. of salt, 0.8~1.2wt. of salted shrimps, and 1.8~2.2wt. of the powder of freeze-dried Alaska pollack, based on 80~82wt. of the dehydrated Chinese cabbage, and seasoning the dehydrated Chinese cabbage; (f) unit-packing the seasoned Chinese cabbage; and (g) aging the unit-packed Chinese cabbage at 0~5°C for 10days.
