An asynchronous motor is used as the recirculation drive. Its slip, i.e. the deficit below synchronous speed, is measured. This is a measure of the proportion of the gas component of interest, e.g. steam, under given conditions of pressure and temperature of the gas mixture. Preferred Features: The measured slip is used to control the composition of the gas mixture, especially for moisture control of the medium recirculated in equipment treating foods.
