A noodle composition containing ramie leaves and its preparation method are provided to impart the functional properties and specific color of ramie to noodles, and to reduce the intake of salt and obtain the effective ingredients and specific flavor of Salicornia herbacea by using Salicornia herbacea for salt in a kneading process. A noodle composition containing ramie leaves is prepared by the steps of: (i) mixing 5~10wt.pt. of ramie leaf powder and 5~10wt.pt. of bean flour to 100wt.pt. of wheat flour; (ii) adding 5~15wt.pt. of egg, 1~5wt.pt. of salt, and 50~70wt.pt. of water to the mixture, and kneading it; (iii) aging the kneaded mixture for 24hr; and (iv) pressing the aged mixture to squeeze out noodles, or cutting to make noodles. In the step (i), the ramie leaf powder is made by gathering ramie leaves, washing 2~3 times, parboiling in water at 80~100°C for 3~5min, cooling, drying, and grinding. In the step (ii), the salt is Salicornia herbacea powder made by grinding Salicornia herbacea dried naturally for 7~15days. |
