PROBLEM TO BE SOLVED: To provide a thickening gellant that is nature-derived and safe and can thicken or gel acyl glycerols when added thereto in a small amount. SOLUTION: Acyl glycerols are thickened or gelled with addition thereto of a small amount of cerebroside. Preferably, the sugar chain comprises a galactose monosaccharide and the fatty acid is a non-hydroxy fatty acid. The acyl glycerols are heated at 95°C or higher after the addition of cerebroside.
