<P>PROBLEM TO BE SOLVED: To provide a milk constituent-containing composition in which an oil-off phenomenon, that is a phenomenon in which an oil droplet is separated, is suppressed by adding one type of constituent useful in the food industry, particularly for the beverage production. <P>SOLUTION: This milk constituent-containing composition contains 0.001 to 10% by mass of a water soluble xylan-containing polysaccharide containing 30% by mass or more of a xylose component and 40% by mass or more of a constituent having a molecular mass of 10,000 to 120,000. <P>COPYRIGHT: (C)2008,JPO&INPIT |
