<P>PROBLEM TO BE SOLVED: To provide a gel composition having a sense of transparency and a touch of grain even containing a whey protein. <P>SOLUTION: This gel composition having a sense of transparency and a touch of grain even containing a whey protein can be obtained by producing as a gel composition containing a whey protein, an agar and water and having a pH value of 3.5 to 4 at 25°C and a molar equivalent of a carboxyl group per 100 g of the gel composition of 0.0032 or less. <P>COPYRIGHT: (C)2008,JPO&INPIT |
