Nutritional supplement, for a saccharification-fermentation medium to prepare ethanol from a starch-based material by alcoholic fermentation, comprises an active ingredient as crude or extracted form obtained by fermentation with a mold. An independent claim is included for a process of preparing ethanol from the starch-based material comprising a saccharification-fermentation step using the medium of which the initial glucose content in the starch-based material is 95% i.e. equal to the glucose content after a liquefaction stage, and optionally a presaccharification stage by adding the nutritional supplement in the medium; and #spent grain obtained from the preparation of ethanol comprising ergosterol at greater than 5 g.
