PROBLEM TO BE SOLVED: To provide a technique capable of determining the best kneading finish point, even in a horizontal kneader that is incapable of visually observing the dough, without requiring decision by a skilled engineer, and applicable for monitoring a kneading state over the whole range of the food dough, when kneading bread dough, or the like. SOLUTION: This method detects a torque applied onto a rotor for kneading the food dough, comprising a visco-elastic material disposed in the kneader, frequency-analyzes a torque detection value, and monitors the kneading state of the food dough, based on analyzed frequency distribution. Specifically, the torque detection value is short-time Fourier-transformed, to display thereafter the frequency distribution of a load torque waveform; change with the lapse of time in a DC component is displayed; and the kneading state of the food dough is monitored, based on the frequency distribution and the change with the lapse of time in the DC component.
