PROBLEM TO BE SOLVED: To perform a stable methane fermentation in treatment of organic waste containing a large amount of saturated fatty acids by suppressing granulation of fat masses, inhibiting clogging of piping, a storage tank, and a methane fermentation tank, and inhibiting deterioration of the fermentation. SOLUTION: In a methane fermentation apparatus, a slurry regulating tank 12 installed ahead of the methane fermentation tank 11 is equipped with an agitator 13. The slurry regulating tank 12 is agitated under an agitation condition of a G-value, an index of agitation strength, of 60-150 s<SP>-1</SP>. The concentration of fat in the organic waste in the slurry regulating tank 12 is adjusted to more than 5 g/liter, and the ratio of saturated fatty acids in the fat is adjusted to more than 0.4.
