PROBLEM TO BE SOLVED: To provide an economically advantageous method for producing an S-substituted L-cysteine derivative, on which expectation of the applications as a medical drug for health, or preservative and food additive are placed. SOLUTION: The method for producing the S-substituted L-cysteine derivative includes a microorganism requiring L-methionine and L-cysteine for growth, which is cultured in a fermentation culture medium, and an organic compound having a mercapto group is added to the culture medium and the microorganism is cultured, to thereby accumulate a considerable amount of the S-substituted L-cysteine derivative, corresponding to the organic compound having a mercapto group and added to the fermentation product and the fermentation liquid.
