A method of manufacturing bean sprouts by soaking soybeans in sea buckthorn(Hippophae rhamnoides) leaf extract and illite-water suspensions is provided to remove pesticide residues, heavy metals and harmful microorganisms from soybeans and to obtain various vitamins and inorganic matters of illite and the flavor of the sea buckthorn to bean sprouts. Sea buckthorn leaf is washed with water, dried with a hot wind of 50 to 60deg.C for 2 to 3hr in a drying room. Then 6 to 10% by weight of the dried sea buckthorn leaf is soaked in 90 to 94% by weight of illite-water suspensions at 40 to 50deg.C for 9 to 11hr and filtered to give sea buckthorn leaf extract. Soybeans are soaked in the sea buckthorn leaf extract, put into an earthenware steamer after taking out and sprayed with water at 4hr intervals for 6 to 7 days. The illite-water suspensions are prepared by the steps of: grinding illite to 200 meshes; mixing 1 to 2% by weight of illite powder and 98 to 99% by weight of purified water, leaving alone for 5 to 7 days and filtering.
