摘要 <P>PROBLEM TO BE SOLVED: To provide a method for extracting qualified essence derived from dry food from dry food raw material without using a large amount of liquid or requiring much time. <P>SOLUTION: The method comprises adding water content to dry food raw material so as to be moisturized and swollen, and thereafter adding sugar and/or sugar alcohol to the moisturized and swollen material.
