<P>PROBLEM TO BE SOLVED: To provide a method for extracting qualified essence derived from dry food from dry food raw material without using a large amount of liquid or requiring much time. <P>SOLUTION: The method comprises adding water content to dry food raw material so as to be moisturized and swollen, and thereafter adding sugar and/or sugar alcohol to the moisturized and swollen material. Such a process enables efficient extraction of essence components without any substantial heating treatment in a process of extracting the essence components, and the obtained essence has no scorched smell due to heating to become excellent in flavor or taste. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
