An operation control method considering a stack temperature rise of a fuel cell hybrid electric vehicle is provided to acquire a stable output by lowering a maximum current limitation value outputted from a motor and raising a voltage level for starting a battery assist. An operation control method considering a stack temperature rise of a fuel cell hybrid electric vehicle includes the steps of: switching on a vehicle; measuring voltage at a high voltage bus terminal of a power distribution unit in real time; determining whether the measured voltage value of the high voltage bus terminal is smaller than a voltage alarm level of a high voltage power converter(S102); increasing a counter one by one in case that the voltage value is smaller than the voltage alarm level of the high voltage power converter(S103); determining whether the counter is larger than a comparison value(S104), and if the counter is larger than the comparison value, decreasing a first control factor value and increasing a second control factor value(S105); updating the first and second control factor values to a RAM(S106); making a maximum current limitation value as a first control factor value and a voltage level for starting a battery assist as a second control factor value(S107), and determining whether a starting key is switched off and a system is shut down(S108); storing the updated first and second control factor values to a flash memory in a controller when the starting key is switched off and the system is shut down(S109); and reading the updated first and second control factor values from the flash memory, lowering the motor current limitation value and moving up the battery assist point.
