PROBLEM TO BE SOLVED: To provide scissors for filleting fish by which fish meat is cut off from the center bone by blade parts by opening and closing the scissors advanced along the center bone matching a groove at the center part of the scissors to a peak bone of the center bone of the fish meat without the head and separate a peak bone of the center bone from the center bone by the groove part without cutting. SOLUTION: The scissors for filleting fish includes blades provided on both outside of the scissors to form both blade scissors. A groove is set on the center of the scissors to pass a peak bone of a center bone therethrough. Springs are provided at gripping parts of the scissors for opening/closing the blades.
