摘要 <P>PROBLEM TO BE SOLVED: To provide a method or the like for producing a dried food enabling hot water cooking or reconstitution with hot water in a short time, and providing good texture and properties of being loosened well. <P>SOLUTION: The method for producing the dried food includes at least (1) a first step P1 for boiling a processing object obtained by processing a preparation of a raw material containing starchiness to a prescribed shape, (2) a second step P2 for soaking the boiled processing object in an aqueous solution after the first step P1, (3) a third step P3 for subjecting the processing object after the second step P2 to an air-drying treatment in a condition of 45-100&deg;C temperature and &ge;5% and <55% humidity so that the weight may reach &le;50% of the weight before the drying at 40 min from the start of the air-drying. <P>COPYRIGHT: (C)2008,JPO&INPIT
