An image processing apparatus and an image processing method are provided to perform classification between objects accurately when converting a color image to be printed into a gray image. An image processing unit(110) determines a plurality of representative colors, and assigns a gray value to a plurality of the representative colors so that interval deviation among a plurality of gray values in a certain gray value range is less than a certain value. The image processing unit assigns a gray value to a certain color of a color image according to similarity between the certain color and a plurality of the representative colors.
