A method comprises converting tryptophan and indole-3-lactic acid into monatin by means of for producing indole-3-pyruvate and 2-hydroxy 2-(indol-3¬ylmethyl)-4-keto glutaric acid intermediates. The conversion is effected with the participation of polypeptides which catalyse the process.
