A method of manufacturing soybean ice cream-like food using soybean protein and smell free soybeans as a soybean ingredient is provided to ensure stickiness peculiar to milk products and to produce food products having a good taste without a soybean smell and containing soybean fiber. Soybean ice cream-like food contains a soybean ingredient comprising 1 to 15% by weight of soybean protein and smell free soybeans. The soybean protein is not derived from smell free soybeans and contains more than 65% by weight of protein. The soybean ice cream like food does not contain any one of sugar, solid oil and milk fat. Soybean ice cream like food is prepared by the steps of: putting the soybean ingredient, seed oil, maltose, stabilizers, emulsifiers and flavors into a mixing tank; heating the mixture while agitating; homogenizing the mixture with a homogenizer; aging the mixture; cooling the mixture and aging the mixture. |
