A gas fryer is provided to intermix combustion gas within a heat pipe by installing a spiral ceramic screw at an exhaust port of the heat pipe, and prevent degradation of cooking oil during frying by improving uneven temperature of the gas fryer, evenly frying entire surface of food at optimum frying temperature. A gas fryer comprises a combustion chamber(22), a spiral ceramic screw(30), a tank(40), and a ceramic pot(44). The combustion chamber is communicated to at least one or more heat pipes(26) horizontally penetrating the inside of the tank to supply heating temperature, and having a ring-shaped high-temperature resistant ceramic reinforcement(24) facing onto the inner wall of the heat pipe. The spiral ceramic screw is installed in an exhaust port side of the heat pipe to allow the heating temperature to be spirally exhausted along the spiral groove(32) of the ceramic screw. The tank whose upper side is open and lower side is shaped as a hopper to dump cooking oil by an on-off valve. The ceramic pot comprises a plurality of ceramic balls contained in a mesh sieve to allow cooking oil penetrate.
