摘要 Disclosed is a method for production of a liquid Koji having an enhanced plant fiber digestive enzyme by using a liquid culture medium, without the need of using any expensive plant fiber digestive enzyme preparation or genetically modified bacterium. Also disclosed is a method for producing a dried liquid Koji product and an industrial alcohol (ethanol) using the liquid Koji. A method for production of a liquid Koji comprising the step of cultivating a Koji mold (a culture raw material) in at least one liquid culture medium selected from a liquid culture medium containing a grain whose surface is entirely or partly covered with at least a hull, a liquid culture medium containing a bean and/or a potato whose surface is covered with a hull and a liquid culture medium containing amaranth and/or quinoa receiving no pretreatment (e.g., grinding or crushing), wherein the amount of the culture raw material in the liquid culture medium is controlled to produce and accumulate at least glucoamylase, acid-stable alpha-amylase and a plant fiber digestive enzyme simultaneously in the liquid Koji; a method for production of a dried liquid Koji product using a liquid culture medium, the method being characterized in that the liquid Koji produced by the aforementioned method is dried; and a method for production of ethanol by a fermentation process using the liquid Koji.
