<P>PROBLEM TO BE SOLVED: To provide a flat sunny-side-up egg obtained by flatly forming a sunny-side-up egg made of broken fresh egg liquid, and prevented from browning, flavor deterioration and freezing denaturation. <P>SOLUTION: The flat sunny-side-up egg 1 is made of a broken egg, and has no round-state protrusion comprising an egg yolk part at the surface thereof, wherein the area of an egg-yolk part 2 exposed at the surface accounts for ≤30%. The flat sunny-side-up egg 1 is produced using a fresh egg supply device 10A provided with a flow-down path 13 supplying the broken fresh egg liquid E on a cooking plate 20, an input port 11 putting the broken fresh egg liquid E formed at the upper part of the flow-down path 13, a discharge port 12 for the fresh egg liquid E at the lower part, and a breaking tool such as a blade 14 for breaking the egg yolk membrane E1 of the fresh egg liquid E, equipped between the input port and the discharge port. <P>COPYRIGHT: (C)2008,JPO&INPIT |
