PROBLEM TO BE SOLVED: To develop a method and an apparatus for treating shochu (Japanese spirits) distillation lees characterized by having a high water content, high BOD, somewhat difficult solid-liquid separation, high susceptibility to putrefaction, production on various scales, and difficulties in small and medium enterprises because of necessary of a lot of equipment investment, which method and apparatus do not require a lot of capital investment and are highly efficient. SOLUTION: Shochu (Japanese spirits) distillation lees undergoes separation with a solid-liquid separator into a solid component and a liquid component. The solid component is fed into a fermentation tank where aspergillus is added to conduct a weight reduction and liquefaction. The liquid component is fed into a storage tank where lactobacillus is added to suppress the occurrence of putrefaction and malodor. Microbubbles are fed to cause a degradation or floatation separation of organic matter, followed by passage through a filter medium such as calcium carbonate, charcoal, coal ash, and silica stone to purify them.
