<P>PROBLEM TO BE SOLVED: To provide an excellent antiinflammatory agent efficiently suppressing inflammation and having high safety and to provide medicines and foods produced by using the antiinflammatory agent. <P>SOLUTION: The antiinflammatory agent is composed of a combination of at least one component selected from hydroxytyrosol and hydroxytyrosol precursors and at least one component selected from glucosamine, galactosamine, glucosaminoglycan and their pharmacologically allowable salts.
