<P>PROBLEM TO BE SOLVED: To provide a method for treating a potato by which the potato has a good consistency and attractive appearance and breaking into pieces while cooking can be suppressed, and to provide a method for producing a potato salad having the good consistency and attractive appearance using the treated potato obtained by the method for treatment. <P>SOLUTION: The method for treating the potato includes heat-treating the potato peeled and adjusted to a specific size in an aqueous solution containing ethanol and vinegar added thereto at a high temperature and then cooling the resultant potato.
