<p>The device for the hot break separation in the brewing process, comprises a separating container (2), wort supply (4), a wort discharge (5), and a mechanism formed for the production of a fresh gas flow via the surface of introduced wort and assigned to the separating container for fresh gas supply. The separating container forms a closed chamber, in which a fresh gas supply line (11) and a discharge pipe flow. The fresh gas supply line is connected to a fresh gas reservoir and a pump device above a wort level (7) during the hot break separation. The fresh gas supply line is arranged diametrically opposite to the discharge pipe. The pump device is formed as a jet pump, which is connected to a coolant pipe. The device supplies fresh air to the fresh gas supply line. The separating container is formed in rotationally-symmetric manner, and the wort supply flows in tangential manner. A number of controllable valve flaps is arranged in the fresh gas supply line and/or in the discharge pipe. A control unit is intended for controlling the pump unit and/or the valve flaps. The device is connected with a nitrogen producer, a mechanism for the passage of fresh gas flow through water and a mechanism, in which the fresh gas flow can be kept at a moderate temperature.</p> |
