Sundae covered with a starch coating layer and its preparation method are provided to maintain the specific taste of sundae even if it is chopped. In sundae(11) comprising sundae skin(12) and sundae stuffing(13), the sundae is chopped by 10~15mm in thickness and a starch coating layer(14) having a thickness of 0.1~0.5mm is formed on the whole outer surface of the chopped sundae, wherein the starch coating layer prevents the water contained in sundae from evaporating. The sundae is prepared by the steps of: (i) mixing starch flour and water in a volume ratio of 1:1~1.5 to make a starch solution; (ii) filling sundae skin with sundae stuffing to make a semi-finished sundae product; (iii) steaming the semi-finished sundae product; (iv) chopping the steamed sundae by 10~15mm in thickness to form chopped sundae; (v) coating the whole outer surface of the chopped sundae with the starch solution; (vi) heating the coated chopped sundae at 100°C for 2~3min to form a starch coating layer; (vii) drying the chopped sundae with a starch coating layer at room temperature for 5~10min; and (viii) vacuum-packing the dried chopped sundae.
