A method for preparing a wine is provided to obtain the wine with excellent taste, color and flavor and including eleutheroside by mixing-fermentation of Acanthopanax senticosus and grape and further performing a second fermentation of a fermented wine with wood chips. A method for preparing a wine including Acanthopanax senticosus comprises the steps of: (a) mixing 2-10 wt.% of Acanthopanax senticosus fruits with 90-98 wt.% of grape juice to prepare a fermentation raw material; (b) after inoculating the fermentation raw material into yeast and initiating fermentation by stirring it 2-3 times every day with maintaining an initial temperature at 15-16 deg.C, fermenting it for 10-25 days; (c) after making juice out of the fermented wine obtained from the step(b) and mixing 5-6 wt.% of wood chips with 100 wt.% of the juice, post-fermenting it at a temperature of 12-16 deg.C for 300-420 days; and (d) after making juice out of the wine obtained from the step(c), performing post-treatment. Further, the species of the grape is campbell early. |
