<P>PROBLEM TO BE SOLVED: To provide a normal temperature circulation type acid beverage that stably containd fructan, such as inulin at a high concentration, and which will not cause lowering of production value on the quality management and flavor aspects, by taking notice of the taste change brought about the by hydrolysis of fructan. <P>SOLUTION: This high-concentration beverage containing fructan is mixed and added with a tomato fruit crushed processed material, such as, tomato juice according to its lycopene content. A method for stabilizing the beverage containing fructan comprises adjusting of pH to 3.5-7.0, and adjusting the content of lycopene derived from red color vegetables of the tomato juice so as to be in a range of 5-500 mg/L. <P>COPYRIGHT: (C)2008,JPO&INPIT |
