The albuminoid concentration and viscosity of ovalbumin is reduced, while at the same time retaining its working properties, by forming a homogeneous mixture thereof with acid whey or rennet or a mixture thereof. The concentration and viscosity may be so reduced that the resulting mixed proteinate can pass through anion or cation exchangers, and furthermore can subsequently be sterilized e.g. by passage through a sterilizing filter or by heating to 100 DEG C. The pH of the resulting mixed proteinate can be reduced to a value of about 2.0 by the addition of suitable acid, or the proteinate can be neutralized or alkalized by the addition of suitable alkali; the proteinate can be subsequently be sterilized. |
