The present invention discloses formulations for sheeted, baked nut-based snack chips that have a crispy, crunchy texture. Ingredient formula ranges have been determined that provide improved dough cohesiveness during process ing, and improved flavor, texture, appearance and structural integrity of th e finished snack chip. The dry ingredients are combined with water to make a dough, which is then sheeted and cut into pieces. The pieces are baked to p roduce nut- based snack chips.
