Disclosed is a process for producing a betaine such as carnitine in a high yield, which can prevent the occurrence of any side reaction to a larger degree compared to a conventional process. Specifically disclosed is a process for producing a betaine represented by the formula (1), which comprises the step of conducting the quaternary amination of an amide represented by the formula (2). (2) (1) wherein A¹, A² and A³ independently represent a C₁-C₂₀ hydrocarbon group which may have a substituent; and X¹ represents a halogen atom.
