A process for determining a hypoxanthine content in a muscle sample using a direct voltammetric measurement of hypoxanthine concentration (C Hx ) in a supernatant prepared from the muscle sample. The hypoxanthine content determined by voltammetry can be correlated with a freshness measure of a meat product from which the sample originates, e.g. QIM score evaluated by a sensory panel or K-value calculated from HPLC determination of ATP metabolites. A kit for preparing samples and a device for voltammetric determining C Hx and correlating C HX with freshness measure are disclosed, as well as a process for building data sets of voltammetric determined C Hx from meat products with known freshness measure for use in the correlation. |
