A process is described for working pieces of meat, comprising the steps of providing pieces of meat; preparing a saline; salting such pieces of meat with the saline; cooking the pieces of meat; cooling the pieces of meat; dividing the pieces of meat; and dressing and packaging in a foodstuffs package the divided pieces of meat.
