摘要 <p>The procedure for aligning and forming dough strands (16) for pretzel production, comprises supplying the arriving pi -shaped or U-shaped dough strands with a cross-part diagonal to a conveying direction of a conveyor belt (4) to a device (2) for aligning dough strands with thighs in the conveying direction, detecting the length difference between the thighs of the dough strands by sensor devices (3, 3') during the dough strands is supplied to the device and transferring its value to a control, which controls the device in dependent upon the detected length difference. The procedure for aligning and forming dough strands (16) for pretzel production, comprises supplying the arriving pi -shaped or U-shaped dough strands with a cross-part diagonal to a conveying direction of a conveyor belt (4) to a device (2) for aligning dough strands with thighs in the conveying direction, detecting the length difference between the thighs of the dough strands by sensor devices (3, 3') during the dough strands is supplied to the device and transferring its value to a control, which controls the device in dependent upon the detected length difference immediately after the dough strands with the device for a plant, so that the dough strands are aligned. One of the two sensor devices is damped for detecting the dough strand ends, which are arranged at a side of the conveyor belt on same height and axially considered before the device for aligning. A time is measured up to damping the other sensor by detecting the second dough strand ends. The length difference between the thighs is determined from the common conveyor belt speed and the measured time in the control. The time point is determined, at which the dough strands arise with the device for the plant by the conveying speed, the axial distance between the transfer point of the dough strands to the conveyor belt and the device for aligning and pulsing of the conveyor belt. A light barrier (15) is arranged axially viewed in the conveying direction before the device for aligning and is interrupted by the movement of the conveyor belt by the arriving dough strands. A signal transfers at the control when the light barrier is no longer interrupted, so that the time point is computed from the common conveyor belt speed and the common distance between the light barrier and the device. A loading sensor appealing on pressure is intended at the device, detects the concern of the dough strands and transfers the information to the control. The dough strands are aligned, in such a way that they are turned to the half of the length difference in the direction of the shorter thighs. The dough strands before the alignment through the device are stretched and/or smoothed by the device for stretching and/or smoothing the dough strands arranged axially viewed in the conveying direction before the device. An independent claim is included for a system for stretching, smoothing, aligning and forming dough strands.</p>
