<P>PROBLEM TO BE SOLVED: To obtain banana puree having a bright tone of color, excellent original flavor of banana, extremely smooth palate feeling, and moderate viscosity, suitable for a person handicapped with chewing and swallowing, corresponding to sol mashable with the tongue or sol free from the need of chewing, defined in universal design food, and having banana as the 100% raw material. <P>SOLUTION: The banana puree is obtained by cutting banana fruit flesh into round slices of a thickness of 5-15 mm, heating the center of the product to 85-100°C by heating vapor at a heating rate of ≥0.22°C/s, and adding 0.1-0.2 (w/w)% of L-ascorbic acid to the product followed by crushing. Banana puree-containing food is obtained by addition of the banana puree as the raw material of each kind of food. <P>COPYRIGHT: (C)2008,JPO&INPIT |
