A texturized egg protein product comprises an extrudate of a composition comprising about 20-80% by weight of food grade protein and about 20-80% by weight of an edible starch, wherein the food grade protein comprises at least 50% by weight of dried powdered egg white. The texturized egg protein product can be used as a meat substitute, meat extender, snack food, or like food product. |
