<P>PROBLEM TO BE SOLVED: To provide instant gelatin which is dissolved in cold water without turning into an undissolved lump of flour, gelled just after dissolved or cooled to be gelled, and having jelly strength suitable for practical use, or gelatine having jelly strength suitable for practical use, free from opaque in its appearance or rough feeling in the mouth due to insoluble parts, and producing homogeneous gel. <P>SOLUTION: The method for producing gelatine comprises a dry/pulverization process where fish-derived gelatine comprising gelatine raw material as a main component, meltable in cold water at ≤15°C, and gelatinized at the dissolving temperature or lower temperature than a gelatinizing temperature, or fish gelatine having gelling ability still in an amorphous molecular state. <P>COPYRIGHT: (C)2008,JPO&INPIT |
