An apparatus and a method for forming grooves in the head of Chinese cabbage and sprinkling salt are provided to allow salt to easily permeate into the head of Chinese cabbage through the grooves. An apparatus for forming grooves in the head of Chinese cabbage and sprinkling salt comprises: a conveyor(10) which moves Chinese cabbages(20); a position sensor(100) which is installed at one side end of the conveyor and senses a Chinese cabbage; a support device(200) for arranging a Chinese cabbage to the middle of the conveyor, which is installed at both sides of the conveyor in the rear of the position sensor and is pushed to the middle of the conveyor if the position sensor senses a Chinese cabbage; a blade device(300) which descends by hydraulic pressure to form grooves in the head of the Chinese cabbage; a grappling device(400) which is placed next to the blade device, descends as the blade device part descends, and grapples the Chinese cabbage; a salt sprinkling device(600) which is installed in the rear of the blade device and has a hopper, an upper salt-sucking part and a lower salt-discharging part; and a controller which is electrically connected to the position sensor, the support device, the blade device, the grappling device and the salt sprinkling device and transmits/receives data.
