It is intended to provide a method of producing a roasted cereal extract whereby a sufficient concentration can be achieved. Namely, a method which comprises: the roasting step (S10) of roasting cereal (brown rice 1) as grains; the dipping step (S20) of impregnating the roasted cereal with a dipping liquor LQ1 (water) to swell the inside 1b of the cereal and splitting the cereal grains; and the extraction step (S30) of bringing the inside of the split cereal grain with a solvent LQ2 (water) and thus extracting the roasted components contained within the cereal. In the roasting step, the cereal, which has absorbed the water in the whole of the inside thereof, is heated to thereby form a carbonized coating film 1b on the cereal surface followed by carbonization of the interior part of the cereal. |
